Vegan Eggs

So many innovative and incredible things happening in vegan foods. Follow Your Heart brand has stepped it up recently with these vegan eggs. I’ve been buying their mayo’s far back before I was even vegan, but now they have vegan cheeses and dressings and so much  more. Their vegan eggs are a huge hit among vegans and non vegans.

In fact, it’s hard to tell the difference, but I’d say these taste cleaner. You can buy these online or find them in most health food stores and Whole Foods. They even come in a cute egg carton like box.

The instructions are easy. What I found is that you can’t mess around with it. It MUST be 2 tablespoons of the powder with 1/2 cup of ice cold water, no exceptions to that or the consistency will be off. It is light, healthy, and made from an algal four blend. Taste and texture are perfect and they great make omelettes with vegetables. Putting my vegan cheese on it tastes great. Use toast or my tapioca crepe as an accompaniment.

Vegan Eggs

Yields: 1 person

  • Egg
  • 2 tbsp vegan egg powder from Follow Your Heart brand
  • 1/2 cup ice water
  • Toppings
  • 2 grated garlic cloves
  • oil
  • salt, pepper, chili flakes to taste
  • fresh herbs; basil, rosemary, cilantro
  • handful peppers, onions, sun dried tomatoes, jalapeños, avocado, etc

Mix the egg powder with the ice cold water. Pour into a well oiled pan just like scrambled eggs. Keep the heat on medium and cover it. Add the garlic, herbs, and veggies of your choosing. Use a spatula and break it up often so it doesn't burn. It will take up to 5 minutes to fry. Shut the heat off and let it sit with the lid on for a few minutes then serve. Serve with my tapioca crepe or toast.
