Silky Vegan Butter

Vegan Butter. Tastes great. Healthy. Inexpensive. No palm oil. No hydrogenated fats. No hormones. 3 ingredients. Let this replace every butter you use and always keep it in your fridge. This recipe is quick and easy enough for you to make large batches and store, and does not taste like coconut oil, olive oil, or cashews. Tastes like butter!

The flavor is that of a very rich buttery spread. It can be used in savory dishes, baking, sweets, frying, breads, on pancakes and toast, and basically anything that you would use dairy butter for. Part of the beauty of this butter is that there is no compromise. It does taste better. I’ve tried this out on many non vegans and they were asking for more. Try it. It will only take you 10 minutes.

Vegan Butter

Yields: 2.5 cups butter

  • 1/2 cup cashews, soaked in 1 cup water overnight or for 3-6 hours
  • 1 cup coconut oil
  • 1/4 cup olive oil
  • 1/2-1 tbsp salt

Drain and rinse the soaked cashews and put all ingredients in blender. Whip on highest setting until it's completely emulsified. Pour into a mason jar and store in the fridge. It will get firm just like butter, stay firm, and it will be easy to spread.
