Strawberry Basil Guacamole (5 minutes)

If you’re a guacamole lover, like most of us, then you’ll find this combination to be a bit different than what you’re used to in guacamole. But, it is so good, so creamy, sweet, and goes great with everything you use savory guacamole for. Since strawberries and avocados are both fruits, and they go with pretty much anything, I figured this would be a good mix. And it was…better than good…amazing! The basil and lemon add a tangy edge, and spread this on toast, dip chips in it, vegetables, or fruit, and it will be the highlight of all the flavors. This recipe is a must try, it’s simple, and you may just eat the whole batch, it’s that addictive.

Avocados are a unique fruit, high in fat rather than carbohydrates and sugar. They are nutrient dense containing high amounts of potassium (more than a banana), folate, vitamins A, B1, B2, B3, B5, B6, C, E, K, magnesium, manganese, copper, iron, and zinc. The monounsaturated fatty acids (oleic acid) in avocados promote heart health, have no cholesterol, prevent cancer, maintain weight, balance appetite, and reduce inflammation. Avocados are especially great for fighting breast and ovarian cancer thanks to their oleic acid. They are also more resistant to oxidation by heat so it is ok to use this oil in cooking without destroying the all the benefits. Include this superfood in your diet when you can. You won’t regret it.

Strawberry Basil Guacamole

Strawberry Basil Guacamole

Yields: 1-2 cups

  • 2 avocados
  • 1 cup strawberries
  • handful of fresh basil (leave some for topping)
  • 4 tbsp coconut or grapeseed oil
  • juice of 1 lemon
  • 1 tsp cayenne
  • pinch of salt
  • optional; handful of raw cashews, soaked in water overnight and rinsed (adds creaminess)

In the food processor, add half cup of the strawberries, and 1 avocado, the oil, lemon, and spice, optional cashews, and blend. Depending on how you prefer, you can put it on the highest setting to make it a creamy blend, or keep it on low for chunky.

Using a spatula, pour the contents of the blend into a bowl. Separately, chop the avocado, basil, and strawberries up, and then toss them into the creamy blend, so that it's half chunky.

Garnish with chopped fresh basil and serve.
