Stracciatella Nice Cream

Stracciatella is a popular, traditional gelato variety in Italy. It is a lot like chocolate chip ice cream, but smoother. Melted chocolate is poured into the churning gelato and produces long ribbons that solidify in the cold then get broken up in pieces. Here is my nice cream version, and it only takes a few minutes to prepare, has no sugar, and no need to melt chocolate (unless you like), we’re just going to use cacao nibs. It tastes so much like the stracciatella in Italy due to the shreds of cacao that are in every bite.

Nice cream is made simply by blending frozen chopped bananas in the food processor or blender, with nothing else, and letting them churn into a creamy, thick, solid ice cream. It can take a minute or two to get the banana meat into the blades and fully fold to form into a cream rather than chunks. It tastes great, iss easy, and healthy. You can add anything to nice cream; other fruit, matcha, vegan caramel, chocolate sauce, etc. Top it off with coconut flakes, almonds, agave or maple syrup, melted almond butter, or anything else you like.

Yields: 1-2 people

  • 4-8 sliced frozen bananas (the more you use, the easier it is to whip)
  • 1/2 cup cacao nibs
  • Topping
  • coconut flakes
  • agave/maple syrup
  • pinch of salt

Slice the bananas before you freeze them, in a tupperware container or a bag. This will allow it to move into the blades easier. Place them in a food processor or high powered blender and blend them. I always use a food processor for nice cream because it works better. It will take some time, and you might need to move the meat down into the blades, or use a plunger if you are using a blender (high powered blenders only will do this). It will begin to move, form, and then turn into a whip.

Add the cacao nibs last and let them break up. Serve immediately.
