Spinach Artichoke Dip/Spread

Yields: 1 1/2 cups dip



You can make this either 2 ways; throw all the ingredients in the food processor at once, OR cream the cashews first in a blender with the olive oil, then pour that into the food processor with the artichokes, spinach, and the herbs. The first way will have the cashew bits and the second way it will be more of a spread due to the cream.

Heat quickly if desired then serve. Toss with pasta, rice, over bowls, stir fry's, on bread...anything.
