Pumpkin Smoothie Bowl

Pumpkin smoothie bowl with dates and banana. This is probably the most filling smoothie bowl you’ll ever eat as the pumpkin will keep you satiated for hours. The consistency is so rich and creamy, so decadent, comforting yet sweet. You can also add frozen pumpkin (freeze cubed chunks of a steamed pumpkin or freeze canned pumpkin puree in a tupperware container) and it will make a great ice cream.

Pumpkins are an incredible food with so many varieties, benefits, and ways to prepare them ranging from savory to sweet. They are loaded with vitamin C, healthy fats, potassium (balances electrolytes), and beta carotene (converts to vitamin A), making them good for skin, strengthening immunity, heart health, preventing and fighting off cancer, muscles, vision and eye health. Low in calories but high in fiber, a combination that will keep you feeling full for long periods of time, while curbing your appetite and aiding weight loss. Pumpkins also contain tryptophan, an amino acid that helps regulate moods, sleep, and produces serotonin for brain health. Lastly, they taste amazing and are a fantastically versatile food.

Pumpkin Smoothie Bowl

Yields: 2 bowls

  • 1 can organic pumpkin puree or 1 cup mashed fresh steamed pumpkin (freeze it to make an ice cream)
  • 4-8 medjool dates (take pits out), depending on your sweet tooth
  • 1 whole frozen banana (peel and put in a plastic bag in the freezer in advance)
  • 1/4 of raw soaked cashews (soak overnight and rinse)
  • 1/4-1/2 cup almond or coconut milk (depending on desired consistency and if you're using frozen pumpkin)
  • 1 tbsp grated ginger
  • cinnamon
  • ice as needed to thicken to desired consistency
  • optional for more sweet; coconut sugar, maple syrup, agave, stevia, sugar

Blend ingredients and top with some fruit, seeds, nuts, etc
