Oatmeal Raisin Cookie Smoothie

Why not make my smoothie taste like a cookie? My favorite so far; oatmeal raisin cookie smoothie. I’m always looking for ways to make my smoothies and smoothie bowls the closest thing to a dessert as possible but without the guilt. This way I can get the satisfaction of something filling and sweet but healthy and nutritious. When I crave cookies I usually try to whip up some raw batter with oats and coconut and dates, but that can take longer than I want. A smoothie is easy because you just throw everything in the blender and that’s it…one thing to clean in the end and I’m out the door. Most of my recipes I think up with beforehand while I’m bored on the subway, then I go home and sit and write it down, experiment with the measurements, and try to make everything as simple and rounded off as possible as I test run it. Some of my recipes are spur of the moment things I come up with from limited ingredients in my fridge and without the idea that it would ever make it here. The best ones are when I’m almost out of food and have only a few things in the cabinets. But, alas, sometimes you whip up something so good that I have to run and get the camera, write down the ingredient, take a few snapshots and post it. This was that sort of event, and it was tasty.

Oatmeal Raisin Cookie Smoothie

Yields: 1-2 servings

  • 1/2 cup oats
  • 1/2 cup raisins (soak in warm water for 5 minutes)
  • 1/4 cup raw soaked and rinsed cashews (overnight if possible)
  • 1 frozen banana
  • 2 tbsp maple syrup, agave, sugar, or 4 pitted Medjool dates (pit them yourself as they are softer, if not then soak in warm water for 5 minutes)
  • 1/2 cup vegan milk (you may need more 2/3 cup depending on your blender)
  • a few cubes ice if needed

If you can, soak the cashews and raisins, but if not no worries. It won't be as creamy but still good. Blend all ingredients on high until everything is liquid. The less liquid you can get away with adding, the thicker it will be.
