Sprouted Soda Bread

I’ve been making soda bread my whole life for a variety of reasons. It is cheap, quick, easy, yeast free (safe on a candida diet), and there is no science or hit or miss aspect to soda bread that you get with making a rise-dough. Plus, you can make a million variations from sweet to savory to plain. I make mine plain with a hint of sweet, as I like to spread butter, jam, or almond cream cheese on top.

Lentils- Loaded with iron, protein, fiber, amino acids, and a full profile of vitamins and minerals. A true powerhouse legume that is low in calories, versatile, and tastes great. Some of the vital nutrients include high levels of molybdenum, folate, copper, phosphorus, manganese, iron, B1, pantothenic acid, zinc, B6, and potassium. Deficiencies of these vitamins and minerals can lead to heart conditions, nervous system issues, poor hair, skin, and nails, brain fog, low energy, etc. Soaking them overnight before cooking helps with nutrient absorption, as well as with all legumes. I highly recommend sprouting these.

Sprouted Soda Bread

Yields: 8-10 slices

  • 2 cups sprouted spelt flour
  • 2 cups fresh or dried sprouted lentils
  • 1 cup teff flour (or you could use extra spelt)
  • 1/2 cup oats
  • 2 tbsp flax meal egg (soaked in 4 tbsp water for 15 minutes before adding)
  • 1/4 cup flax seed meal
  • 4 tbsp apple sauce
  • 1/2 cup coconut or olive oil
  • 1/4 cup maple syrup or agave, or sugar
  • 1 1/2 cups vegan milk
  • 2 tsp baking soda
  • 2 tbsp baking powder
  • 2 tsp salt
  • cinnamon
  • dash coconut sugar or brown sugar for topping

Start the 2 tbsp flax egg.

Mix all the dry ingredients and fold together. Slowly add the coconut oil, maple syrup, nut milk, etc, and keep gently folding, then add the flax formula.

Form into a ball and knead inside the bowl. It should be dry, not sticky, keep extra flour and water on hand if you need to add more to get it right.

Shape as a circular loaf and drizzle the oil, syrup, and cinnamon on top. Bake on 300F for 30 min, or until a knife comes clean out of the center. Let it cool before you slice.

  • Total time: 1 hour or less
