Lemon Butter Pasta with Squash and Artichokes

Homemade vegan butter and lemon over a bed of pasta, tossed with seared squash and artichokes and then baked. Vegan butter is cheap, easy, quick , delicious, and healthy. No saturated fats and more versatile. Always keep this butter on hand and make large batches weekly or bi weekly. It takes a few minutes to make and doesn’t taste like coconut oil. It tastes like creamy rich butter and you can use it for everything that dairy butter is used for.

Vegan Butter

Yields: 2.5 cups butter

  • 1/2 cup cashews, soaked in 1 cup water overnight or for 3-6 hours
  • 1 cup coconut oil
  • 1/4 cup olive oil
  • 1/2-1 tbsp salt

Drain and rinse the soaked cashews and put all ingredients in blender. Whip on highest setting until it's completely emulsified. Pour into a mason jar and store in the fridge. It will get firm just like butter, stay firm, and it will be easy to spread.

  • 1 box fusilli or any other pasta
  • 2 sliced yellow squash
  • 1 can quartered artichoke hearts
  • juice of 1 to 2 fresh lemons
  • 2 handfuls of chopped fresh parsley or basil
  • 1/2 to 1 cup bread crumbs for coating (Italian seasoned are best)
  • 1/2 cup vegan butter
  • 1/4 cup of the finished pasta water (from after straining the pasta)
  • a few slices of lemon for garnish
  • salt and pepper as desired

Start the pasta water.

Fry the squash and artichokes in a skillet with a little oil, salt and pepper sprinkled on both sides until golden.

When the pasta is just before al dente, strain it but save the pasta water to the side.

Mix the veggies, herbs, and the pasta, add the butter and stir. Add the pasta water.

Pour into a casserole dish, sprinkle the bread crumbs on top, add a few lemon slices, and bake for 10-15 minutes until top looks browned and crispy. Serve.
