Chia Superfood Pudding

Chia pudding is a sweet and nutritious way to start your day. This pudding is blended with nuts, fruits, and seeds that are high in essential fatty acids, protein, and amino acids. Chia is loaded with omega 3 fats, fiber, and holds 10 times its weight in water. This will keep you satiated, hydrated, and reduce cravings.

In recent years, chia has grown in popularity as a superfood far beyond its native land of Mexico. Chia, meaning strength in Mayan, was known as the warriors food to sustain them with energy and endurance all day.The chia nutrient profile consists of; fiber, protein, omega 3 & 6, calcium, copper, phosphorus, potassium, zinc, vitamins A, B, E, and D, sulphur, iron, iodine, magnesium, manganese, niacin, thiamine, essential fatty acids such as alpha linoleic and linoleic acid, and antioxidants. This seed is a true winner for skin health, aging, digestion, essential nutrition, heart health, diabetes, energy and metabolism, bones and muscles, dental health, and fighting cancer. The soaking process, which essentially sprouts them, turns them into a gelatinous pudding. The ratio is 4 parts water to 1 part chia, and can be eaten as soon as 10 minutes later.

Chia Superfood Pudding

Yields: 1 serving

  • soak 1/4 cup of chia seeds in 1 cup nut milk
  • 1 tbsp coconut oil
  • handful pumpkin seed/hemp seed
  • handful coconut flakes
  • handful slivered almonds
  • handful cacao nibs
  • handful blueberries
  • Maple syrup to taste
  • cinnamon

Soak the chia seeds in the nut milk for 15 minutes.

If you want the pudding thinner, then slowly add a bit more milk.

When it's turned into a pudding, fold in the rest of the ingredients.
