EZ Mushroom Quinoa Meatballs

2 ingredient meatballs. Sautéed juicy mushrooms mashed up with spices and quinoa then rolled into meatballs and baked, then topped with my V Parmigiano (nut free). Need I say more? These were so quick and simple to make. I wrote down this recipe the night before and the next morning it came together perfectly. My goal was to cut the ingredient list down to a few ingredients and focus on that beautiful mushroom texture and taste. I popped these left and right, and when I left the kitchen for a few minutes my cat devoured a few before I caught the little thief. He loves my vegan cooking too, and he makes me laugh so it’s all good.

EZ Mushroom Quinoa Meatballs (2 ingredients)

EZ Mushroom Quinoa Meatballs

Yields: 10-15 meatballs

  • 2 cups chopped mushrooms of any variety, I used white (1 8oz package)
  • 1 1/2 cups cooked quinoa
  • 2 tbsp olive oil
  • 1 clove grated garlic
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp chili flakes
  • 2 tsp chopped fresh rosemary/basil/thyme/sage

Cook the quinoa, you will need 3 cups water and 3/4 cup quinoa to make 1 1/2 cups. Sauté the chopped mushrooms in an oiled skillet on medium high with the spices until they are browned. Make sure the quinoa is completely dry or else the recipe will change. Strain it in a fine mesh strainer and then pour onto a large cloth or towel to absorb more of the moisture from it and press another towel on the top. Mushrooms also release a lot of water so be sure to put those on a paper towel or napkin and get the excess moisture out by blotting them. Drying them in the sun on a towel can help. The more dry the easier they will be to work with and roll.

Add the quinoa and mushrooms to the food processor and mash them up, adding the olive oil, herb, and spices. Put that mixture in the fridge for 20 minutes and then roll them into tiny meatballs (if you need some flour for your hands then use a bit) and place on a baking sheet with wax or parchment paper underneath. Put them into the oven at 350F for 25 minutes, rolling them over halfway in between.
