Lentil-Quinoa-Teff Chili

If you haven’t heard of the Ethiopian staple grain teff, then look it up, and try to order some online or find in a market near you. Bobs Red Mill brand sells it in most markets and health food stores. It’s such a versatile and meaty grain, great for soups, breads and baked goods, vegan meatballs and burgers, pancakes, salads, bowls, raw foods, etc. Not to mention, it’s a powerhouse food loaded with iron, calcium, magnesium, vitamin B6, protein, fiber, and provides long lasting energy. It’s been touted as the healthiest grain out there. Quinoa chili and/or lentil chili will be delicious too if you can’t find teff. Just substitute the teff for brown rice, buckwheat, farrow, or more lentils and quinoa.

Lentil-Quinoa-Teff Chili

Yields: 10-14 cups

  • 2 cups cooked quinoa
  • 2 cups cooked teff
  • 2 cups cooked lentils
  • Vegetables
  • 1 chopped onion
  • 1 cup chopped celery
  • 6 grated carrots
  • 1 diced red pepper
  • 6-8 grated garlic cloves
  • 3 to 4 diced large tomatoes
  • 1 28 oz tomato puree (San Marzano brand is the best)
  • 1 6oz can tomato paste
  • 1-3 cups vegetable broth, depending on desired thickness
  • 2-4 tablespoons chili flakes
  • 1/2 cup olive oil
  • 4 to 6 tablespoons maple syrup, brown or coconut sugar
  • handful of fresh chopped basil garnish
  • salt and pepper to taste

In an oiled pan on medium heat fry the onions, pepper, and celery. When it's browned, add the grated carrot, garlic, oil, maple syrup, chili, salt and pepper, and tomato contents. Keep this cooking on lowest heat with the lid on for 30-45 minutes. Stir constantly. Make sure it looks like it's lightly bubbling and turning slightly orange. Add the teff, lentil, and quinoa mixture to this and fold it in. I like a chunky chili so if you want it more soupy then you will need to add all the vegetable broth. Start with the cup and add slowly until it's where you want. I garnish with fresh basil and extra virgin olive oil.
