Cherry Drop Cookies (gluten free)

This has been my first post back after a few long weeks of moving into a new apartment here in Brooklyn. My new place has a great garden that I’m already enjoying with my cat, Sonny (pictures of him coming). I also have a bunch of potted herbs going, and some cherry tomatoes and sweet peppers that I’ll be excited to add in my dishes soon. Feels really good to be getting a much needed fresh start. Summer has been very positive so far, though I’ve missed posting my recipes. And, there is nothing better than a simple batch of healthy cookies to break in my new oven. These cherry drop cookies are loaded with superfood nutrition and energy. When it’s hot outside, I like to eat something light for breakfast that has a touch of sweet. I find these cookies to be the most scrumptious, soft, hearty, thick, moist, and delicious little treats with coffee and berries. A simple and fun recipe that you’ll enjoy. One of these cookies goes a long way, too. Eat one a half hour before a workout and you’re good to go for long lasting endurance and strength, due to the low-carb, high protein, and healthy fat content. 🙂

Cherry Drop Cookies (gluten free)

Yields: 10-12 cookies

  • 2 flax eggs (2 tbsp flax meal soaked in 2 tbsp water for 15 minutes)
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup raw buckwheat groats
  • 2 tbsp chia seeds
  • 1/2 cup melted coconut oil
  • 1 tbsp vanilla
  • 1/2 tsp baking soda
  • 1/3-1/2 cup maple syrup or agave
  • pinch of salt
  • 6-10 fresh or frozen cherry halves

Prepare the flax eggs and set to the side for soaking. Blend all the ingredients and toss together lightly. Add the flax eggs when they are done.

Scoop a large spoonful of the batter on an oiled cookie sheet and make sure it's molded. You could also roll it into a ball and then press it down lightly. Place your thumb in the middle to make space for a cherry half to nestle in.

Put the cherry halves in the cookies, then slide the tray into the oven and bake for 15-20 minutes of 350F.
