Need a delicious dip/pesto/spread to put on literally anything? This is it. And it’s just a few ingredients…ready in 5 minutes….half raw…lots of iron and chlorophyll rich spinach..and absolutely mouth watering. Nothing beats the flavors of artichoke and spinach combined. I served this warm with some pita chips and everyone loved it. It’s healthy, light, creamy, bursting with flavor, and simple. Spinach is such a great superfood that I think I need to talk about it here.

Focaccia Pizza

You will have a hard time not eating this entire pizza. It is absolutely delicious. If you love mediterranean flavors then this is the dish for you. It has a fresh rosemary-thyme-oregano pesto, sweet potatoes, tomatoes, atop a rustic focaccia crust. Many people will argue on what real focaccia should be like, but it really comes down to preference. Some like it fluffy and soft and others like it crispy. Even in Italy you will find many variations in different regions and cities. Just like pizza, there isn’t one way that it can be done delicious, as long as you know what you’re doing and it tastes great. This dough is flavorful, crispy, and yields the best of both. It’s the perfect hybrid.

Beet Hummus

There has been so much rage over beet hummus and now I understand why. It’s AMAZING! can’t believe I didn’t make this sooner. It’s slightly sweet, creamy, delicious, healthy, and filling. That should be enough right there for you to try it. I love this recipe. It is made entirely from scratch, no need to buy tahini as it uses raw sesame seeds, and it’s simple. Cheers to simple foods. Beets are a great food, wonderful for your liver, and such a good base for all kinds of dishes. This hummus is high in protein and fiber, healthy fats, and very satiating.

Zucchini-Blue Cornbread

This cornbread has a twist of color and flavor, and tastes slightly savory, sweet, and tangy. It can be eaten alone or as an accompaniment to any meal. I really like the look of the blue cornbread with the zucchini and lime on top. If you’re into pretty food, this certainly is as pleasing to look at as it is to eat.
