Avocado Pesto with Lentils and Veg

On the bottom of this dish is a bed of spinach. It’s important to get some raw food with enzymes in every meal. It’s cleaner fuel for your body. There is so much delicious nutrition in this dish. On top are roasted vegetables, black lentils, and this beautiful, tangy, avocado pesto.

Avocado Pesto with Lentils and Veg

Yields: 3 servings

  • 4-6 cups cooked lentils
  • a few large handfuls of fresh organic greens; spinach, kale, arugula mesclun, etc.
  • Vegetables for Roasting
  • 1 head of broccoli, chopped
  • 1 chopped squash
  • 1 cup chopped mushrooms, baby bella are the best
  • 3 diced sweet potatoes
  • Avocado Pesto Dressing
  • 1/2 avocado
  • 1/2 cup basil, or 3 large handfuls
  • juice of 1 whole lemon
  • 1/4 cup white wine vinegar
  • 1/2 cup oilve oil, or coconut, or pumpkinseed oil, or a mixture
  • 2 tablespoons maple syrup
  • 2 cloves grated garlic
  • 1 tablespoon of salt, pepper, and chili or cayenne
  • optional; a handful of cashews or slivered almonds

Cook the lentils, whatever color. Soak them overnight and rinse before cooking. 3 cups raw will make 6 cups cooked.

Chop the sweet potatoes up and throw those in a sprayed cookie pan in the oven, on a low tray, on broiler setting. Sprinkle salt and pepper on top. Stir them every 5 minutes so they brown on each side. After they are half cooked, add the broccoli, mushrooms, and squash to the pan, spray more oil on top, and more salt and pepper if you like. Stir them occasional so they evenly roast for about 30 minutes. Shut the heat off. Keep them in the oven to stay warm until they are ready.

Blend all the sauce ingredients on low to medium setting. Do not whip or you will turn it into a smoothie. Pulse it for a few seconds here and there to avoid that.

Get the bowls ready with the raw greens. Layer the roasted veggies on top of the greens, and the lentils on top of that. Pour the dressing on top.
