Apple Pie Oat and Date Cream Bowl for 2

If you are a fan of apple pie, dates, and oats, then you’ll really enjoy trying this recipe out. It’s sweet, but also wholesome and healthy. Apples, oats, buckwheat, and chia are all nutrient dense superfoods.

Don’t be afraid to serve this as a dessert in place of an apple pie or crisp. It’s not the most complicated dish and not the easiest, but make a large portion and store it.

Oats are full of vitamins and minerals, making them a great and convenient source of nutrition. They are loaded with manganese, phosphorus, magnesium, copper, iron, zinc, folate,  silica, calcium, potassium, vitamin B1, B5, B6 and B3, protein, complex carbohydrates, and fiber. Also an incredible source of heart healthy, nutrient packed, energy.

You’ll be using chia and oats for the base. You could also use regular rolled oats, which don’t require soaking time. Steel cut oats are raw and hold more enzymes and nutrition and they are sold pretty much everywhere. If you prefer to use steel cut then soak them overnight with the instructions below. The chia seeds don’t need to be soaked overnight, they only need 15 minutes. Everything will expand during the soaking process.

  • -Soaking-1 cup nut milk to every 1/2 cup of steel cut oats. Overnight. Produces 1 cup.
  • -Soaking-1 cup nut milk per 1/4 cup chia seeds. 15 minutes. Produces 1 cup.

    Apple Pie Oat and Date Cream Bowl

    • 1 or 2 finely sliced apples
    • Oats
    • 2 cups soaked oats and chia seeds ready to go in whatever ratio you like (see above instructions in post)
    • Toasted Granola
    • 1/8 - 1/4 cup maple syrup or coconut sugar, or brown sugar, or cane sugar
    • 3/4 cup raw buckwheat
    • 1/4 cup finely chopped pecans, walnuts, or almonds
    • 1/4 cup coconut flakes or shreds
    • cinnamon
    • coconut oil for frying
    • Date Cream
    • 10 medjool dates
    • 3 tablespoons maple syrup or coconut sugar or agave
    • 1 cup almond milk
    • 3 tablespoons coconut oil
    • optional; 2 tsp vanilla extract
    • pinch of salt

    Have the oats and chia ready and already in the bowls. No need to sweeten unless desired.

    Make the date cream first. It can sit to the side and be heated if desired.

    Get the granola going in an oiled (coconut oil) skillet on medium heat. Mix all the ingredients and keep stirring until it's golden, 5 minutes. Remove from heat and put to the side.

    Work on the apples at the same time as granola. Put the sliced apples in a non stick skillet with some coconut oil and dust with a cinnamon on both sides. Get them golden.

    Now, it's time to layer this together. Add the granola on top of the waiting oat and chia prepared bowls..

    Grab those warm apples from the skillet and place them in a fan like arrangement on the top, then drizzle with the date cream.
