4 Superfood Ball Recipes

Superfood balls. Purple sweet potato. Banana. Peanut butter. Chocolate. All in a base of oat, coconut, date, and coconut oil. You can imagine the delicious flavors already. These colorful eye catching little poppers can be eaten cold, frozen, baked rather than raw, and are sweet and easy. Just a few of these and you’re good to go, superfood nutrition and energy for hours that will keep you satiated, provide you with all the benefits of coconut and oats (read more below), and are high in protein and fiber.

Heat does not kill the beneficial fats in coconut products versus in many other food forms. Coconut contains medium chain fatty acids, making it a healthy saturated fat. Their small cell structure and unique absorption process (only 3 steps to be converted to energy versus 26 steps for other fats) allows them to be readily used for energy rather than stored. It is highly digestible, potent in antioxidants, anti microbial, promotes hormone balance due to the healthy fats, and anti-fungal, just to name a few.

4 Superfood Raw Ball Recipes

Yields: 25 balls

  • Base
  • 2 cups oats (dried or steel cut)
  • 1/2 cup raw coconut shreds or flakes
  • 1/2 cup almond meal or flour, or raw almonds
  • 1/2 cup coconut flour (can sub for more almonds or coconut)
  • 8 medjool dates, buy with pits and de-pit them, soak in 1/2 cup warm water for 5 minutes before adding
  • 2 tbsp chia
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 tsp salt
  • Banana Mixture
  • 1/3 of a ripe to black banana
  • 2 tbsp melted cocoa butter
  • Peanut Butter Mixture
  • 2 tbsp peanut butter
  • Chocolate Mixture
  • 2 tbsp cocoa
  • 2 tbsp melted cocoa butter
  • Sweet Potato Mixture
  • 4 tbsp sweet potato (I used purple)
  • 1 tbsp melted cocoa butter
  • optional things to add to the base or mixtures; mashed strawberries, jam, raspberries, almond butter, blueberries, matcha, açai powder, blackberries

Mix all the base ingredients in a food processor until it is flour-like and pour into a bowl. Ration a half cup of the base into 4 bowls and add the contents of each mixture in to the separate bowls. Mix each batter and roll into balls. Everything should roll up easy, but if it's too wet then add some extra coconut shred/almond meal/oats to your hands for rolling. If it's too dry, add an extra tbsp syrup or coconut oil, but do not add water or vegan milk as that will just make it loose and overly wet. You could also add jam or mashed fruit which will make them a little extra sweet. They will harden up at room temp due to the cocoa butter and coconut oil, so feel free to refrigerate them or freeze them as they taste best cold. If you want to bake them then put the balls on a cookie sheet and bake at 350F for 10 minutes.
